Hey, y’all, come on over to my back fence today and help me celebrate the release of my contemporary romance, ALL THAT MATTERS. Put your boots on, grab your cowboy hat and join the fun. I’ll furnish the grub.
Thanks to my publisher, Tell-Tale Publishing, there’ll be some surprises, too.

Here’s what I’ll be cooking: Texas Frito Pie, Garlic Grits and Mama’s No-bake Banana Pudding. I’ll even include the recipes. There’ll be plenty of sweet tea and Dr. Pepper, too.

TEXAS FRITO PIE – serves 4 hungry 
or 8 not so hungry

Preheat oven to 350ºF

3 cups Fritos corn chips
3/4 cup chopped onion
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite—homemade or canned. I use the kind without beans)

Spread 2 cups of Fritos in 8x8inch baking dish. Sprinkle half the onion and half the cheese over Fritos. Pour the chili over the onion and cheese. Sprinkle the remaining Fritos, onion and cheese over the chili.

Bake 15 or 20 minutes until cheese is bubbly. Serve hot.

GARLIC GRITS – serves 12

Preheat Oven to 400ºF
2 cups regular grits
8 cups boiling water, salted
1 stick margarine
2 6oz. rolls garlic cheese
1 tsp. Tabasco sauce
2 tsp. salt
3 eggs – beaten

Cook grits in salted, boiling water until thick. Add margarine, cheese, Tabasco sauce and salt, mixing well. Fold eggs into grits and put in greased casserole. Bake at 400º uncovered for 30 minutes.

MAMA’S NO-COOK BANANA PUDDING

Copied from her own recipe card in her own words

Mama...1902-1987

Sauce: 1 cup sugar 2 eggs
2 TBLS flour 2 tsp. butter

Mix together, beat well, add 2 c. boiling water, stirring constantly. Cook until thick, being careful not to burn. Flavor with vanilla, lemon or p’apple extract.(lemon is my favorite)

Line 8x8 dish with a layer of vanilla wafers, then a layer of bananas slices. Pour 1/2 of sauce over layer. Repeat with wafers and bananas again and pour rest of sauce over. Be sure all the bananas are covered with sauce so they don’t turn dark.

Chill well and serve.

  20. Texas Frito Pie sounds great, but not a fan of onions. Do you think if I take out the onions, it will still be good?

    And I've been telling everyone I know to check out ALL THAT MATTERS. Can't wait to read it. But a lot of people I know don't have a Kindle or a Nook. Is ALL THAT MATTERS coming out to a regular book at all? Friends and Family would like to know.
